Vehicle customization options are disappearing

Summary of Issue: When I go to edit any vehicle in the mechanic menu, once I click on an option and try to back out of it... I will lose pretty much all options. As shown in the video: I clicked on "body parts" and it gives me roughly 6-7 options, when I click on "respray" and go back into "body parts" I lose 3 of the options, rinse and repeat until there is only 1 option left.

Impact on Gameplay: This pretty much makes it impossible to make customizations.
