Convert the RedM server discord to a new Gaming discord

So it's been almost a month since the news broke that we won't be able to get a RedM server going. The discord for it is still up and feels like it's just collecting dust. I know the last attempt at an Echo gaming discord was mediocre at best, but I think it would be neat to turn that discord into something that could be used and give a gaming discord a second shot. Also, it doesn't have to be anything in-depth at first. Maybe just a few basic channels and take it from there.
